First big cook on my new M1. Timing question.

I just picked up a 12lb brisket, a couple of 7lb butts, and some wings for a bbq tomorrow. People are coming over at 3, but probably won't plan to each until 4 or 5.

The plan is to finish up the brisket and butts and put them in a faux cambro while I cook the wings. I'd like to have these cooking around 3. My first smoke on the M1 wanted to hold right around 250, so I expect that to be my cooking temp again.

The question is, what time tonight should I start the cook?
 
At 250, I would say you could plan on getting Briskets on about midnight, Butts on around 3-4. Pull everything around lunch, rest in cooler. Then cook your wings and have everything ready at 3.
 
Midnight sounds good. That gives you 12-15 hrs for the cook. It will hold easily in the cooler for 4-5 hrs
