Chile Mac...with a side of beef ribs

Using up the last of the Hatch chiles in the freezer.

Slathered the beef ribs with bacon drippings, then seasoned with coarse salt and cracked black pepper. Into the drum with hickory.

Cooked onions and garlic in bacon drippings and butter, til tender...then made a basic white sauce. Flour, milk and seasonings. Also added provolone and mozzarella for the gooey factor.

started with a layer of sauce, then mac...

peeled and seeded the chiles...

ended with more mac and cheese sauce, cracker crumb topping and a dab of butter...

Nothing fancy. I like chile mac and could probably make a meal out of it by itself. :)

I gotta check out these Hatch chiles - they're gonna be all around here in a few weeks apparently - just in time for the SoCal Bash in fact! That mac n cheese would be a great side. And beef ribs, yeah...:bounce:

I've got a long to-do list going but I really want that. My wife probably wouldn't be crazy about it but I'm going to have to try it anyway.
