Peppers! To roast or not?

I've seen and roasted Hatch. Which peppers are desirable to roast and skin? Are some varieties mandatory or is it just a preference thing? I grew a bunch of poblanos this year and am new to them. Let me know what your knowledge is!
 
Definately smoke the poblanos and then vacuum pack for winter chili. I do not take off the skin, just whole. Same with any pepper, jalapenos, etc.
 
Yes on roasting poblanos. Really I think any pepper lends itself to roasting. Just don't let the little ones fall between the grates!
