Mmmmmmmmmmmmmmmmmm, me like hot sauce. Over the years I have tried quite a few hot sauces. Everyone and their uncle makes them. To me a good hot sauce is like getting slaped in the face by a beautiful woman. It hurts so good! A little pain and a little pleasure. Some folks (Dave's Insanity) think that the secret to a good hot sauce it the heat. The best hot sauces to me are the ones that optimize this pain, pleasure ratio. It is similar to trying to make or find a good sweet and sour combination. When it is right it sings. When it is wrong it is grose. Don't get me wrong, I like a good "burn your mouth" hot sauce, but there had better be some reward for having done so. To date my favorite hot sauce is one called West Indies Creole. It last a long time because you can't just slather it on with impunity but it is so flavorfull that it leaves you smiling. http://www.calantilles.com/Products/prod22.html
Another one of my favorits is Ring of Fire. http://www.hotsauceworld.com/hsw1122.html A little pricey but it is a big bottle.

I have the Habanero Seasoning From Hell and Habanero Cajun Seasoning From Hell.
They are both nice additives to rubs.

If you ever get up to Ft. Worth, try to make the time to stop by and check the store out. Great place.
