Scored on some nice looking short ribs yesterday. Also had some pork cheeks in the freezer that I have been wanting to cook. Both on the BGE at about 225. Here we go!

2 Hour Turn

Two hour turn and starting to look pretty good. Small cheeks getting close to being done. Ribs at 180 doing just fine

Just an FYI, those beef ribs take me about 6 hours at 275* to get tender. Probe between the bones with a toothpick to test...

Well ribs are done. Just a little bit overdone, thinking next time may foil them a bit. Tenderness was good. 6 hour total smoke time. Pork cheeks were excellent, first time cooking them.
