I make this pretty often. The main reason I like it is..... it's tasty and it only takes about 35 minutes to grill. Kind of a quick meal that will feed several people.
The recipe is called Chinese BBQ Pork, got it from my mom years ago. She used whole pork butts and an oven but I like the grilled version better.
The marinade....
(make a double batch if needed to cover the meat)
2 cloves minced garlic
one "thumb sized" piece of fresh ginger peeled and minced
3 tsp sherry
3 1/2 TBS soy sauce
2 tsp sugar
1 tsp salt
2 TBs honey
1/2 tsp five spice
and about 1/2 tsp red food coloring
I butterfly a pork back loin...
I score the meat to soak up lots of marinade...
chill it overnight...
onto the hot coals...
added a dish of rice to catch some smoke. with onions, seasonings and chicken stock...
let the slab roast over the hot coals about 15 minutes then flipped over...
after 15 more minutes I flipped it back and added asparagus...
pulled the rice when the liquid had absorbed...made smokey fried rice.
That's it. The roasted pork, smokey fried rice and asparagus...
The meat comes out moist and tender. I love the fact that it's so quick to grill....about like a thick pork chop. The whole meal is ready in 35 to 40 minutes.
