Kamado Joe Smoked Pastrami (first try)

hey all,
with St. Paddy's Day happening last week, I wanted to try something different with the corned beef.

Started off with a little trip to the grocery

soaked the corned beef in water for 10 hours, changing the water at 5 hours to "de-brine"

after debrining, the corned beef looked like this

then I sprinkled some Kamado Joe Steak Seasoning on it and smoked it on my grill at 250f until she probed tender, around 205 degrees

Looks awesome, I just got into this pastrami makin' thing myself, did the first one yesterday (thread with pics already up). Had a couple of pastrami and swiss on rye with spicy mustard. Gonna do a couple of rubens tonight.

Thanks for the positive comments everyone, I was expecting this to be crazy-spicy but it wasn't. The flavor was amazing and I think that the de brining really helped with that,
