I hate to sound stupid but I read stuff on the internet and find conflicting information.I have the cheapo brinkman charcoal smoker,2 door.My first question is the smoker came with a water pan I have used it but I read here that if you don't use it the smoker will burn hotter. does the steam help if you use the water pan ? question #2 I want to know what is the best type of fuel for smokers,I hear that charcoal/wood is the best all around where Lp is ok but you loose some of the "bark" and I have no Idea about electric smokers.I like the results of charcoal with my smoker.Sorry for being long winded.

Charcoal n wood chunks (golf ball to fist sized). Water pan is personal preference really - try with and with out -same type of cooks and decide. I run water pans as I seem to get more even and consistent temps thru smoker.

I'm not a fan of Gas smokers and most on here are not but some are. I have not had a Gas Smoker but have heard it can be dry environment and benefits from water pan.
 
You can learn ANYTHING on YouTube. If you get a wok get stainless steel.

Charcoal and wood chunks. I had one similar to that when I started. I generally used the water pan, not so much for the steam but because I thought it better regulated the temps and kept the temp spikes from happening.
 
I had the older single door model. It needs to be modded to allow the ash to fall thru or you will be fighting temps with or without water. I always ran it with water to help the temps stay somewhat even. I put a small grate in the bottom of the charcoal pan and always used charcoal and wood chunks.
