vending questions

I had a few questions about vending. I know everybody talks about oz per person and pounds you need to make. I know 2 smoked pork butts will fit into a full aluminum pan. Estimation how many sandwiches will that make. Also, for sides baked beans, slaw and Mac salad. How much would a full or half pan feed. The pans would come from Sam's club. Thanks

2 6lb butts or 2 10lb butts. That's why you go by weight to figure portions

A full deep foil pan like Sam's Club sells will hold about 15lbs full. That will make 60 4oz sandwiches. Don't try to fill them with side dishes or you will wear them when they fold on you. You should put about 50 4oz servings into one and see how far up the pan is and use that as a guide.
