This is something my mother would make for me when I was growing up. They are called pambazo.

Boiled some potatoes, got some chorizo and onion and cooked them. Then mixed them together and smashed to a paste.

Made a hot sauce

Then we get torta bread and brush on guahillos sauce on them and light toast on the CI

Split open and spread on potato and chorizo.

Added our ingredients... Lettuce, crema mexicana,cotija cheese and red hot salsa

OMG!!!!! I've never had papas con chorizo like that!!!! I'm making those, Tony. Man, I dying over here for one right now. I'd tear that up! A little more info on the guajillos sauce would be awesome.

The guajillo is just that guajillo.

Cut the ends and remove the seeds. Put them in water to soften them and then blend. It will give you a nice heat when eating

Or you can just use the enchilada sauce. Las palmas brand.

Looks great Tony. We make chorizo con papas, but never like that. I'll have to ask my wife if she's had them that way.
