NC style burn barrel
I have a good friend that always burns wood in a ground pit then shovels coals in his offset fire box. He makes good tender NC style Q but does not have the smoke and bark you get from feeding wood to the coals..
I have a patio offset that does good Q, runs almost too clean and often does not give the bark I get from my trailer mounted cooker. I like Texas Q with a good bark and smoke ring.
I have read where charcoal off gasses some chemical (way above my head) that gives a dark black bark to briskets but it's not the same to me, or the family.
So in closing, I guess just go with what you like best. I'm sticking to a stick burner for my longer cooks.
