butcher paper for brisket question

butcher paper for wrapping a brisket, is that the same thing as parchment paper or wax paper?
 
Is that something sold at a grocery store? Im in HEB right now and not by the aluminum foil isle
 
Hard to get in most grocery stores, unless the meat cutter there still wraps in butcher paper. If you don't have an actuall butcher in the area, parchment paper will work also. Crumple it up a few times before wrapping. It will make it easier to use.
 
The butcher said they didnt sell it but he gave me about 6 feet of the kind they use

A lot of butchers use freezer paper which has a thin layer of polyethylene. Be sure you are seeing actual butcher paper.
 
When I first used this stuff I got it off amazon, but you can buy it from a place called POS systems. Get the 36", 18" is just way too small for a large briskie.

The paper he gave me has.a shiney side to it. Is that the layer of polyethylene?
 
You can also order it via Uline.com, but it's not cheap for a backyard cook(like me). It might make more economical sense if you're competing or catering. Other brthren have mentioned kraft wrapping paper, which you can probably get anywhere that sells postage/shipping supplies or an arts and crafts supplier. Or Uline again.

I"ve been working in a paper mill for the last 21 years. If you could see the machines paper is made on and knew all the additives and fillers that go in paper, you probably wouldnt use it to cook your brisket in.

Is there a problem with butcher paper or parchment? They are the only types of paper that I know of that are designed to come into contact with food.
