One thing I've noticed recently is that I can never get a smoke ring if I smoke a corned beef. Regular brisket I can get one almost every time. Now I could really care less if I get one or not, but just wondering if the corning process is what's preventing the smoke ring.

Corned beef point, no ring.

Regular brisket point with a ring.

Seems that the smoke ring is the color of corned beef, so maybe you have a smoke ring, but just can't see it?

The corned beef has already been treated and has absorbed the nitrites in the curing process, causing the chemical reaction with the cells of the meat giving it the pinkish red color and the change it texture. The additional nitrite gases in the smoke will have no visible effects on the corned beef.

Yeah, now that I think about it... Silly me. Don't post silly questions when you've been drinking bourbon!

doesn't bother me if you post drunk as a skunk! Keep the awesome food Pron coming! I'm hungry! Also to answer your question, I think the whole thing has a smoke ring, its just invisible :blah:
