I haven't been able to cook much lately but made time for a fatty. A fatty will last me a couple of days at the least.
Went with my favorite filling, fried tatoes, onions, smoked cheese... no ham this time.
used my stainless fatty piston...
stuffed about 3/4 full.. then chilled while rolling out the sausage.
I roll the sausage inside of a gallon baggie...about 3/4 of the way up, split the sides of the baggie and use it for rolling the fatty.
bacon wrapped.. chilled til ready to cook.
sprinkled with cracked black pepper and into the drum at around 300F to 325F.
I could have let the bacon get a bit crispier.. I love crisp bacon... but I was too hungry to wait.
topped a toasted english muffin..
and eggs...
hollandaise and called er good.
Next day was leftover fatty for supper.
Chickenfried a couple of slices of fatty..This is my favorite way to prep leftover fatty.
egg/milk bath and seasoned flour, then fried til crisp and golden...
made skillet gravy with the drippin's...
split a hot buttered biscuit...topped with chickenfried fatty.
Heaped a couple of big spoonfulls of skillet gravy on top and that was pretty much it.
I liked it a lot!
Hadn't had a fatty since camping last summer. Not sure why I waited so long.
Sorry for so many pics but thanks for looking!
