Last time I cured and it was a bit salty for my taste but I think it's mostly my fault with the seasonings I added to the cure. Most people still really liked it.

Is there a difference in the finished product when curing vs brining? The salmon will be served as a snack with crackers and cheese etc.

I only smoked salmon once, but I followed this method and it was fanfarkingtastic. There's a short marinating period and then curing for about 4 hours. Really, really good - everybody raved about it.

I cure, never have I wet brined fish. If you leave the fish too long in the cure, it can become too salty.. 8 hours for a larger salmon type fillet, or 6 for a smaller trout sized fillet works well for me.
