Been thinking about the TD category and I've decided on "tortillas." So it would be a pretty open category. Anything from a simple taco to whatever you can dream up and serve on a tortilla. Should give people a chance to be pretty creative.

Going to have to up my game. I was going to post mine until I saw this.
 
This is my official entry -

Made Tacos Al Pastor this weekend. If you'd like more details on the how to, check this thread from the last time I made them- LINK

Wasn't planning on entering this so my phone photos will have to do...

Meat was marinated for about 24 hours then skewered up. It was hung in the warmer of my shirley surrounded by an applewood fire - On the skewer is a full pork butt, some pineapple, bacon slices, and onion



After 3-4 hours -



While that cooked I smoked some tomatillos and jalapenos for salsa verde -





Blitzed in the food processor with garlic, onion, lime, cilantro and salt



Pastor came to an internal temp of 170 after about 6 hours -



Chopped it up -



Crisped it on the griddle and served with the salsa, onions and cilantro on some freshly blistered tortillas

Holy cow!! This has to be the coolest thing I've ever seen on here!! I've seen a lot of cool stuff. that makes a beautiful picture!
