I've been planning on making a baked egg dish at some point this week. I believe I've found my technique. Thanks Guerry
 
Man! That is whats up. This is how to keep the inspiration going...Omlettes are my favorite- I have at least 3-4/week- so this is definately inspiring me to make this in the backwoods smoker..just using a bit of wood, I think it would taste great. Im going to give it a try tonight!

I'm glad Jeannie gave him the idea for this, it was awesome! I wasn't so sure about the tater crust but it was amazing. Guerry forgot to tell y'all the funny little incident that happened when he was trying to run this idea by me at work. We both work for the State but in different departments/buildings. I opened up my work e-mail and saw that Guerry had sent me a message with the title, "Annual Performance Evaluation Update". I thought wth? :confused: When I opened it, well...see below.:shock: I'm glad he forwarded it to me, I really needed a good laugh!

You want to get what you’d like to drink and I’ll get some stuff for dinner? Thinking a sliced tater egg pie with mushrooms, spinach, cheese and chopped bell pepper. Make a crust with the taters in a cast iron skillet and let them cook for about 20 minutes or so then add the egg filling.

Thanks Greg! The funny thing about the recipe was the sour cream and hot water mod. We were completely out of heavy cream, and only enough whole milk for Michele's bedtime glass. Then the combo idea hit me. Worked like a charm, and the tangy sour cream actually added another layer of flavoring. I'll be doing that again I can assure you.
