Smoked Chuck Quesadilla

Smoked another chuck recently. Wanted a quick meal that night and I remember someone posting pics of a quesadilla... might have been 16Adams. Who ever it was...thank you!

Seasoned the chuck with this...

into the drum with a small kiss of mesquite...

after a couple of hours I added beef stock and onions...

smoked til tender...

heated a tortilla topped with cheese, smoked chuck, onions...

added a Hatch Chile...

divided into thirds...

That was it!

Tasted pretty good.

Of all the BBQ quesadillas I've done I don't think I've made one with a chuckle. Gonna add it to my adjenda. Looks delicious.

Thank you Mike! I liked the seasoning. Didn't seem to have salt, just dried herbs and veggies which was ok with me. I can add my own salt.
I'll use it again for sure. :-D

Thanks so much Jason. I've been smoking a lot of chucks lately. Really like using the leftovers in dishes. :-D
