I cooked 90 lbs of briskets in a uds last weekend...7 14lb briskets...hung them on hooks. I also put in a drain in bottom so that after 6 hrs, I drained about 1/2 gallon of grease out since I was afraid of a grease fire. The only problem I had when we wrapped them, we had to find space to finish them..roasters, house oven, etc..Also did 60 lbs of pork butts the same way.

Incredible! I put 1 9lb on mine and I thought to myself, wow where am I going to put corn.
 
I will be cooking around 75 lbs of brisket this weekend, but planned to use the Bandera for it. Who'd have thought it could all fit in an UDS?

I don't have hangers, so I'm still using the Bandera, but that's pretty impressive.
 
I see no reason not to believe it. Don't get me wrong, I'd love to see pics, because 90 lbs of brisket would be an awesome site to behold, but it isn't like it couldn't be done. A hanging brisket doesn't take up that much room area wise.
