For those living in the Midwest that runs their damper open about 1/4" open or crescent moon shape, as I do in Elkhart, IN. Can you tell me how long you cook your baby backs. I have done a few racks and last Saturday I pulled them after 1:45 then sauced then put back on for 15 min. They were good but I'm wondering if they would become more tender had I left them on for a total time of closer to 2:30 hrs? Any feedback is greatly appreciated.

I'm in Florida, but unless it's a small and thin rack my PBC rib cooks last 3 hours.

I usually cook for around three hours as well.

I don't think the cooker or the temp matters. Cook until the are bendy:

I did a rack last week. Total was about 3.5 hours from lighting up to on the cutting board. Temp spiked to 304 and quickly settled in at 275 for the duration

I've had bb ribs take from a little over 2 hours to 3 or so hours. Seems to depend on how much I am cooking at one time and outdoor temperature. I have been using the toothpick method and works pretty well. Good luck.
