Sunday cook on the UDS

Fired the UDS up again today.
Put a chuck roast, a rack of spares, and some homemade Polish sausage on. She held 230* all day. I had one temp spike when I pulled the sausage and put the spares on. She leveled right back out.
Ive been running it with only one vent open and she handles perfectly.
Man I love this cooker! :biggrin:

That is some good lookin eats. Take that tater salad off that plate and it would be worth driving to your house for dinner.

A little under 7 hrs. for everything. :shock: The spares took about 5 hrs. and they were a little too done for me. I like a little tug but these were falling of the bone.
I'm really surprised how much quicker stuff cooks on the drum.
A chuck alone on my WSM takes at least 8 to 9 hrs. till I do the fork test.
