Some Shrimp Stuffed Salmon

I usually make a crab mixture to stuff salmon but wanted to go with some shrimp this time.

Poached a few shrimp, rough chopped with scallions, olive oil, minced garlic, lemon pepper and a few herbs...

That was it, a fairly quick meal and I have leftover salmon for a few days.

I liked the shrimp filling for a change. Will be doing it again.

Now seriously cowgirl , was that really better than microwaved Spam beans and rice???? That's what I thought. :))

lol Adams, that Spam and bean dish was kind of rough. I had to try it though. I knew you wouldn't have been afraid to give it a go. lol

Thank you LYU! This is one of my favorite ways to prep salmon. I forgot to mention, I leave the skin on and oil the bottom well so it won't stick to the grate.
They cook pretty fast!

Do you just give the salmon a slice? Or do you cut out a small piece to make extra room for the stuffing?

I just give it a slice. You can really make up any kind of stuffing. I like the crab and shrimp filling but I bet there are other things that would be tasty. I try to use cooked stuffing. Then the salmon doesn't take long on the smoker.

Jeanie, that looks great! I love the idea with shrimp. One question:
How is the salmon left over? I am not a big fan of left over seafood as the taste seems to change dramatically. Maybe one day works??
