somebody shut me the fark up.
I'm off today so I am doing some more experiments. Today experiment is pork and lump. I want to see how long my bullet smoker will hold temp with lump as a heat source. I am also doing a mustard vs. worchestershire sauce experiment on a couple of butts. Here are some pics:

I lit a few briquettes in a chimney to get the party started
I dumped in the hot coals and got things started
In the meantime, I rubbed two butts, big one with mustard, small one with Worchestershire.
I also decided to make some armadillo eggs.
Once the pit came up to temp, I put all of the meat on.
I put the meat on at 9am and except for a temp spike early on, it has been holding steady between 210 and 230 for 4 hours. I stirred the coals once in that time.
I just pulled off one of the eggs. Wanna see?
