What are you guys vending as far as ribs these days? I'm all but giving up on them as I can't find where the money is in them. I like spares better than baby backs but ordered baby back the last time I vended and they came in so small that I felt bad selling them. At cost x 3 I was at $25 for these. If I go with spares that I like the medium whole spares cost x 3 I'd be at $38 which we all know ya just can't get that much.

So I'm curious what you all are doing? I'm about ready to give them up all together unless you can enlighten be as to what I'm missing.

Ouch I was at a bbq restaurant the other day and it was around $24 for a full slab with 2 sides.

I sell them for $24 a rack, and I then sell the rib tips for $12/lb so for a ~$10 average rib rack I get $36-$48 the money is there but you need to take a full rack cut it to St Louis and sell the rib tips separate.

Holy crap what are you paying for ribs?

We use for vending and in the raunt Sea Board Farms 2 3/4 average spares at $2.70 per lb.
Each rack costs on average $7.42 X 3 = $22.27.
We sell for $2 a bone or $24 a rack giving me a food cost of 33%. EZ money.

My current pricing from our supplier is below. I like the mediums personally but they average 5lbs per rack.
