Started off smoking a brisket for Thanksgiving. Turned out decent had to pull it alittle early due to timing.
Nice 15# seasoned with holy cow

Smoked on the yoder at 225

Cut up for the main event

Everything was good. Then today it hit me.
Started off carmilizing some onions. Then shredded some of the left over brisket.

Got some manicotti ready and stuffed them up with the brisket, onion and bbq sauce mixture

Then whipped up a cheese sauce
2 TBS flour
2 TBS butter
2 cups milk
8oz cheddar
6oz cooper sharp
Salt pepper cayenne




Man this was looking good! Got the kettle running around 375

Cooked for 30mins then topped with alittle more cheddar
I put it under the broiler for 3mins at the very end to really get it crunchy



Yea it was pretty good
 
If this is how you handle leftovers, I'd really like to see how you plan out a start-from-scratch meal. Wow!
 
Sooooo Italian tamales?

I'm down with it, actually I'd take three of those and a cold one!
 
I'm not a leftover fan either but I am now!
