Sunrise Sunday Brisket

4 hours hang time. Now wrapped in butcher paper and on the grate. Will start checking probe tender in about 2 hours.

No clue what temp is. Bark looked grand.
Going bludawg on this one. If ever a cooker can be trusted with your meat, flying blind- it's this one.
 
Man that looks good, I've been neglecting my PBC lately in favor of learning to use me SNS on the Performer. PBC comes out Tuesday and I'm posting this and pulling a choice 11# from sams out of the freezer right now.
 
Color and bark look awesome, going to have to give hanging a Brisket a try.
 
Looks amazing! Got my mouth watering for brisket now...might do one on the WSM next Sunday. Been a year since I did one... :shock:
