Where do you guys find this stuff?
I've been to two butchers and the local stores and all of them look at me like I'm crazy asking for beef ribs!
The Kroger nearby ordered some for me...but they were not what I expected. Stringy with very little meat so I skipped on the rest of the box. They had them until they expired.

I saw those at Wally World here in north jersey but the ones they had, had almost no meat. I can't find a good proper beef slab without asking the butcher.

Knows what a fatty is.
Those are beef back ribs. Don't cook them as long as the big beef short ribs

What you have there is VERY different from the beef ribs the Texas restaurants cook.I have tried the ones like you have there a few times.I could never get them edible.Either too greasey or dried out.Good luck and report back.
