Spare Ribs, Sausages and Bologna tonight

Ok, so first thing, I know the date is wrong in the pics. Didn't notice it was wrong till I uploaded them to my computer. These were taken on 7-24-14.

Pic 1 = Backside of spares
pic 2 = front side of spares with added special rub.
pic 3 = just put on the smoker
pic 4 = After 3 hours. The rub is crusting beautifully. Not spritzing on purpose.
pic 5 = bologna with a little rub
pic 6 = bologna and sausages just added to smoker
pic 7 = bologna and sausages just off the smoker. Damn the bologna is awsome.
pic 8 = ribs just off the smoker. So damn tender and AWSOME!!! Really loved the color of these.

Never tried bologna on the smoker. I've got a nephew down in Tennessee now, and he says that's a big thing down there. Going to give it a try. Looks great
 
Nice! Love the bologna. I like to smoke the chubs then slice them 1/2" thick for pan frying. Good stuff. On a CWB, a little sauce, a little slaw and a slice or two of cheese...
 
I wish I had taken pics after slicing. Family was waiting in line with plates just as soon as I cut them. heheheh :thumb: Then I bit into mine and well, that was it...orgasm in the mouth and they were done!!! :biggrin1:

The bologna was awsome and I have a few slices of that left which is gonna be lunch here in a few minutes.

Sausages were all gone too.

Overall, it was a very successful cook and I was happy. :-D
 
I'll take the bologna on some fresh rye bread with some sautéed onion and cheese please.
