Babbling Farker
I did my first butt ever on my UDS yesterday. Up at 6.20 to set the smoker up, get it fired and inject and rub the butt. Put it on at about 7.30 or so and ran it at about 250-275, pulled it about 5.30 check the IT with my thermopop...200°, wrapped it in foil and rested it in the cooler for an hour. Pulled it and made some sammies with SC style slaw and homemade BBQ sauce...went down a treat!
It was an 11lb boneless (next time I'm getting a bone in) and I'll be trimming the fat cap some...rookie mistakes. I think I'll use the diffuser next time as well as the bottom was VERY cooked and hard.
