Good evening brethren!

Me and the boys hadn't hung out in a while so we planned a get together. Had some beef cheek meat in the fridge so decided on Tacos. I decided half braised and half smoked.

Simmered with onion, garlic, cumin, bay leaves, peppercorns, salt.

In the meantime I made salsa rojo(red sauce) and salsa aguacate (creamy avocado salsa)

It was really tender. I foiled at about 170. I pulled it at 200 and let it rest about 1 hr. Most folks loved the braised but me and my brother preferred the smoked.
 
I just had aguacate sauce for the first time a week ago any chance you post your recipe.

Believe it or not my first time making it after tasting it at a Mexican restaurant by my work. I put two and two together and nailed it.

With all the beer in me lets **burp** see

Four ripe avocados

About four roasted tomatillos

Three or less roasted Serrano chiles(skinned and seeded)

3 cloaves of roasted garlic (roasted in foil)

Table spoon or so Mexican crema (cacique)

Salt to taste

Sprigs of cilantro to taste (optional)

Touch of olive oil (optional)

half lime squirted(optional)

Absolutely agree Dave and it's ridoculously inexpensive.
