Are you talking about cooking in the dutch oven, or putting it in the dutch oven to keep warm?

For cooking, I have used an open foil pan with good results. I am sure a dutch oven would work as well. If you want the smoke flavor, just leave the top off during cooking.

If you want to use the dutch oven to keep it warm, just pre-heat the dutch oven.

Yes, I've started it sitting on a wire rack in my CIDO in the smoker with the lid off of the CIDO for a few hours to catch some smoke, then added some more liquid for a partial braise with the lid on. I do it on the wire rack in the Dutch oven to start so whatever juices come out of the meat stay in the CIDO for the braising step. Works beautifully!
