We have had some folks at the church have major accidents (separate times, yet both recent) and we decided to do a cook for each family tomorrow.

So tomorrow I am getting up early and firing up my Shirley (affectionately called Lavern). Going to be cooking:

- 15 pound packer brisket
- 7 pound pork belly
- 3 racks of St Louis ribs
- kielbasa
- Jawl bacon baked beans
- "NOT Kraft" Mac-n-cheese
- 3 loaves of bread

I also need to make up some more sauce. Going to be a busy day.
 
Got the fire going at 6am. Trimmed and rubbed the brisket waiting on the smoker to stabilize.

Brisket is a Costco PRIME. The bad pic doesn't show the excellent quality of this cut.

On and running at 280.

The brisket looks a little lonely. The pork belly will get prepped and put on around 10ish. The ribs, fatties and mac-n-cheese about noon.

Man, I gotta try some of that Mac n Cheese. Peer pressure around this place is crazy!

Cooks lunch...one savory and one sweet fatty, topped with pickled onions and veg casserole.
