Dang brother, I have similar weather, just no brisket. You look to have an ample supply, so if you could just FedEx me some...
 
I spent time in Norfolk from 84-88, and if I were still that close, you could count me in. If we only had the social media such as this forum back then, who knows where we would be today. For one thing, I would have found more brethren.

Meat reached 210 and 216 I wrapped in towles and put in cooler....


Can they stay in cooler for 2 hours?
 
You may want to vent them to release some of the heat and keep them from cooking too much further.
 
Nothing wrong with keeping the wife happy. Great price on the briskets.
 
Looks great... but might I suggest cutting the brisket against the grain (forgive me if my eyes are deceiving me)? You'll get a much more tender result that way.

Honestly that meat was pull apart

You could cut it upside down and the chew would have been the same... God bless the UDS
