PID Controller question

I recently got ahold of an old (SM106) Cookshack electric smoker and the controller is no good. They want $1750 for a new controller.
Would a PID controller do basically the same thing for me?

yes a basic PID controller will do the same thing. I saw where someone used the parts he salvaged from a kitchen oven to make his controller. They all do the same thing just some have more bells and whistles.

I would think not.....

The coolshack draws considerable amperage, most PID controllers usually switch low voltage loads with minimal current draw.

I built one from scratch and used a small PID controller from Omega instruments. The controller was used to switch a 15 amp slave relay, I have used it for 3 years with no problems.

I had a PID on a Bradley with 2 500w heating elements

the PID controls a solid state relay with a 12 v signal, not the 120v ac power

the relay then switches on and off the high voltage heating element
