Halibut Fish Tacos

This is my entry into the “Happy Meal” throwdown.

Besides my wife and my dog I love to fish. If fact this is the Avatar I use on some other sites.


I also love Mexican food. Now living in Southern California I have no problems finding fresh made tortillas either at the store or at the local Tortillaria. This wasn’t always possible as I was born in California but my parents were from Nebraska. When I was 5, in the early 60's, my parents moved back home to Nebraska. There was no Mexican food to be found anywhere back there at that time. We had all grown to love Mexican food when we lived in the East L.A. area, and still craved it back there. But there were no Mexican restaurants, not even a Taco Bell (if you can consider that Mexican food), and none of the stores had any Mexican ingredients. Even though she wanted to eat it as well, my mom kind of hated making it for us as she had to make everything from scratch. (On top of working full time) She had called back to California and had gotten all the recipes from our neighbor (Delores Reyes) and she would enlist us boys to help. This is how / why I learned to cook, as Mexican night was looked forward to with much anticipation and everyone was happy when we ate it. She finally got a job as a buyer at a local super-market and was able to order in tortillas and refried bean to make it easier so we started having it more often. For this reason I decided to make my own tortillas. (Well kind of, I cheated and purchased a 3 lb. bag of Masa Fiha Para to use)

So this cook ticked many “Happy” boxes for me.

I put on the lid and after it cooled down a bit I put on the fish.

While they are cooking I made up the tortillas.





Halibut is done.

I start to make up my tacos. I made this up like I’d get them from a local Taco Stand or Food Truck might serve them. Start with the Halibut.

Now add cheese and slaw.

Add some Tapatio hot sauce,

Now crack a cerveza and we’re ready for the Money shot below.

not much makes me happier than a nice griddle cooked burger. I've had a taste for one for a while now, so I figured I might as well do some up for dinner

gathered my players: salt, smoked paprika, cayenne, mustard and a little white pepper

then, I put my grill on top of my other grill :laugh: I got my wagner round cast iron griddle nice and hot over some lump

once they were about done, I melted some habanero jack on a couple

then, time to assemble. some sriracha mayo, lettuce, a nice slab of beefsteak tomato, some mustard, a couple of homemade pickle slices, and some onion jam. plated up with some potato salad, and some nice crispy oven fries (if you can't tell, I love me some spuds :rolleyes: )

looks, smells, and tastes like summer to me...how does that not make you happy?
what makes me even happier about this meal...when I was getting ready to head outside to start cooking, I asked the boys who was gonna come with and learn how to make some burgers. oldest wasn't interested...youngest almost killed himself jumping out of his chair to run out with me :heh:
and I'm pretty sure the meal made him happy, too!

A happy meal to me includes elements that go well beyond the food your are eating. Every once in a while these factors: culture, history, fellowship, and food combine to make and experience that can only be described as Barbecue Nirvana.

I love me some tacos. Tortillas might be my favorite vessel for stuffing my face! Fajitas are a food truck staple down here! Beer and fajitas make me happy! This is my official entry to the Happy Meal Throwdown!

Tasha picked up some choice skirt steak at the store and I marinated it overnight in some Goya Mojo Criolla.

Got the OTG fired up with some lump and grilled the veggies sprinkled with T&B and beef sprinkled with Cattleman's Carne Asada rub. Served it on fine china with grated cheese and avocado slices with a Shiner Bock in a Solo cup...

What makes me Happy?

Cheese, especially smoked cheese. I eat it sliced. with or without other snacks, I add it to salads, or hot foods to melt all over the top and make goodness.

Please accept this entry in the "Happ Meal" TD - cause it makes me happy and this smoke will make me Happy many times!

Please accept this as my entry to the happy meal TD! Brisket is my favorite BBQ item and consuming it make me happy...so does the process and adventures that can be had while cooking one! Here is my entry, kid crutch and all! :wink:

Been way too long since I cooked brisket and I had the craving!

Decided Sunday would be the perfect day to lounge around on the patio so I stopped by the grocery and picked up a small butt and a brisket point....check out that marbling!

I rubbed it down with Cooper's Olt Time BBQ rub and the butt with a mix of Oakridge Secret Weapon and Comp Beef & Pork rubs.

Got Earl running about 275-325 and tossed them on.

While those were getting all happy, I thawed some JD Hot for a naked fatty rubbed with the same mix of Oakridge.

While everything was cooking, an explorer stumbled upon our site to see if any interesting artifacts or specimens could be found!

But things must have gotten harry when he got to the Temple of Toys and he must not have made it out....I can only assume that the Temple of Toy goblins got to him, becasue the next time I saw him, he was a ghoulish skeleton!

I wasn't sure what I was going to do to escape from the skeleton, so I did the only thing I could think of...I turned on the bat signal!

Here is the brisket after a couple hour rest...a bit overdone, but still juicy as hell and delicious! The Cooper's rub is a bit salty, but damn is it good!
