Tonight I made an Eggplant Timbale for dinner with the last harvest from my Dad's garden. I smoked Italian sausage that my brother made and mixed it with pasta, peas,parmesan, mozzarella, and ricotta cheese. I also added pitted kalamata olives to the mix.

Sorry, no pics of it cut open.
Once dinner gets put on the table my 5 kids go into a feeding frenzy.:grin:

It's really easy to put together and a great way to make use of leftover pasta, if there is such a thing.

I don't really know what I'm looking at, but whatever this is I want it! fried eggplant wrapped sausage and pasta with some gravy! Yes please!
