Decided to fix up some queso for the Longhorns game today.

Smoked up some chorizo and poblano peppers last night while making dinner.

Rolled that up into a make-shift naked fatty...

Threw them on Major with some Stubbs and cherry wood.

Enjoyed a couple brews while things were getting happy.

This one was a Lobo Oktoberfest

Chorizo fatty is done...sliced then chopped and into the fridge until today.

Same with the poblanos.

Gathered up the rest of the ingredients, loosely based on this recipe...

Things got real happy on the stove.

Served in homemade tortillas (not made by me).

This was frickin' awesome! And MUCH less greasy than pan cooking the chorizo!

Looks awesome! I love chorizo but never eat it because it is so bad/fatty. I will have to try a chorizo fatty. I bet it is amazing on a biscuit.

we usually don't eat chorizo either because it is always so greasy when you get it out somewhere around here, but the flavor of the fatty last night was terrific!

Niiice. Chorizo & eggs and and chorizo in beans are my favorite. If you are ever down that way, the Revolver brewery is a good stop on Saturdays, all their beers are good.

Agreed!

I'm not a fan of Blood & Honey. The Bock is my favorite and finally it is available in bottles and I don't have to hunt down a place to get a growler!
