Playing around with some special order ribs. Been dying to try Duroc but these prairie fresh look amazing. Could be my new go to comp ribs

I'm off to slow start this weekend as I just flew home today from biz in New England but fortunately have some homemade italian sausage to make a fatty tomorrow!

Ox Tails sound great. Excellent wintertime soul warmer. I could use that right now.

stopped by an Indian grocery today to get some spices Phu, so thawed out a leg of lamb and doing Rogan Josh. Butchered large cuts from the leg. Marinating for two days. Will smoke, cut into chunks and stew. Baaaaaaaa. Can lamb curries qualify for the Aussie Award? It's a NZ lamb.
