I love this stuff. :)

This is some cold smoked back bacon from one of my Spot pigs.

cube some of the cold smoked steakhouse bacon...

wrap in belly bacon...

roll some in a cayenne brown sugar mix and some in pepper

Then Hot smoke until cooked through...

These were snacks during deer season, I wish I would have made more, they went fast.

Fantastic! Makes sense that the only way to make bacon better is to wrap it in bacon.
The only thing that bugs me about living where the weather is nice & warm all the time is not being able to do those long cold smokes (at least in a way that's practical that I'm aware of).

I've been making slab bacon and loving it - made some pig candy with it today with Habanero Death Dust & brown sugar, etc...

first deep fried prime rib, now home made smoked bacon wrapped bacon!!!

it's like christmas morning with all these gifts!
