The Oysters were $10.90 a dozen and the remaining ingrediants were all in stock but only a couple buck if I had to go buy

These were SOOOO GOOOOOOD that I would give up a couple meals to eat these.

I decided I wanted to whip up a quick and easy family meal tonight. So at the local market I found a family pack of pork steaks on sale for less than $7 so I picked them up. I grilled them for just over a minute on each side. While I was getting the pork steaks ready outside, inside was getting brussel sprouts and carrots to go with them. now pics.

Breakfast for 4 today was fatty and egg biscuit sammiches with home fries.

Jimmy Dean Hot - $3.99 - Used only half the fatty for breakfast, so let's call it $2.00
Spicewine Heffer Dust - $0.25
6 eggs - $1.99/dz, so $1.00
6 cheese slices - $2.00
6 Grands Frozen Southern Biscuits - $3.99 for a bag of 20, so $1.20
6 small taters - not sure, say $2.00
Total: $8.45

It’s been a while since I’ve done a deep dish pie. I’ve been loving the Blackstone Pizza/Patio oven so much I haven’t revisited this pizza style, but a few weeks ago, felt it was time to cook up one of these savory, rich, and hearty pies, especially with the fall weather upon us.

This time, I found a respected source for an authentic style Chicago style pizza dough, which you can see here:

The difference between “pan style” pizza vs Chicago deep dish is the high amount of oil in the Chicago style crust, which renders a very flaky, almost buttery crust. I followed the recipe to the letter. In addition, the sequence of toppings and sauce is totally different, with cheese on the bottom, then followed by toppings, then finally, the sauce. The only difference is I cooked the pizza on the grill, and using a cast iron skillet.

So let’s get started!

We made the dough as prescribed, along with my own homemade sauce, and let the dough sit covered tightly for about two hours. While we did this, we served our local kids treats and tricks.

When the last of the trick or treaters left, we brought in our decorations and started working on pizza construction.

It's important to note here that the sausage is usually put on raw, in a single layer covering the cheese, however, I just didn't want to go that route and clog my arteries prematurely. :biggrin1:

Typically, the sauce is then topped with grated Parmesan and nothing else, but I added a bit of mozzarella as well to give the top a firmer texture:

I pulled the pizza when it had cooked a total of 35 minutes, and then let it rest. The filling of the pie was so molten, I could literally see it “jiggle” as I brought the pie in. I then let it rest for 10 minutes.

So how was it? Well, it was pretty fantastic! Talk about a perfect blend of gooey, cheesy, savory goodness. The crust was flaky and pastry like, which is to be expected. I may experiment with a hybrid crust next time that is more like a regular pizza with a bit less oil so the dough is more bread-like, but overall, it was just delicious, and mighty filling!

Time for the math!

Let’s look at the cost of ingredients:

AP Flour: $.35
Mozzarella Cheese: $2.50 for 8oz
Provolone Cheese: $3.99 8oz(we used the ENTIRE 8 slices)

Pizza Sauce: $1.85
Sausage: 4 links were normally $2.99, but I got them at a whopping 75% off at$.74 x 50%=$.37!
Pepperoni: Large package was $3.99, and only used about 10% so I’m estimating $.50

Total Cost of Ingredients: $9.56, well under $15.00!

ingredients
Onions: 2.5 lbs @ $1/lb (from local CSA) = $2.50
Shallots: ~$1 (from CSA share)
Beef stock: $4 or less (used a few tablespoons of beef base, $4 for entire container)
Bread: $1 for the whole loaf
Cheese: $4 for the 8 oz package
Total: $12.50 :biggrin1:
 
This is an entry...

A little comfort food for a chilly and windy night.

Stuffed Pork Loin Chops with Corn Bread Stuffing and Haricot Vert with a little Pork Gravy

A local store had some nice, thick center cut pork loin chops on sale for $3.49/lb so I grabbed a couple. I also grabbed some corn bread stuffing mix to have on the side. As I was getting ready to cook I decided to stuff the chops instead, so I sliced into the middle of each chop to make a pocket. The pocket was then filled with the stuffing and I use some toothpicks to hold it closed.

Then I gave the outside of the chops a light coat of olive oil and a dusting of Weber Chicago Steak Seasoning and let them site for a bit while the grill came up to temp.

Once the grill was ready I grilled the chops for about 12 minutes per side, rotating 90 degrees half way through on each side. It's hard to get nice grill marks with something that is plump from the stuffing :-D

Once they were done I let them rest for a few minutes while I cooked some Haricot Vert from Trader Joe's to go with the chops. A little pork gravy topped the chops.

The stuffing gave the pork a nice flavor and helped keep it moist and tender.

The total for the meal was...

2 Pork Chops - $7.50
Stuffing - $3
Gravy - $2.50
Haricot Vert - $1.50 (We used about half of a $3 bag.)

Total (for 2 people) - $14.50

Cube Steaks:$10.23 + Potatoes were 10 for $2 so I say about .30 for each one + 1 for sour cream=$12.13

Chicken - $4 (4 quarters were 6.73, I used 2 so I split the price and rounded up)
Andouille - home made.. ? The pork butt was 1.89 a lb.. - $1.89
Bacon - Home made.. ? Pork belly was 2.09/lb - $1.00
Red pepper - $1.24
Rice - $.50
Celery - $1
Onion - $.79
Can of tomatoes - $1.29
Chicken broth - $2.39

Grand total - $14.10
