Good knife for slicing brisket

The Wusthof 14" Brisket Slicer is another excellent choice. It's usually available discounted for about $100.
 
I have the MABA Wusthof Grand Slicer, and it is great. I also have several other long, thin bladed knives that all work for brisket. The key is keeping them sharp.
 
I've got a 14" Messermeister slicing knife that works real well; super sharp, but for some reason I like the 12" Sani-Safe better. The blade is closer to 13" than 12". It works real well too and it's easier to carve with, and takes a real good edge. I actually bought it as a fellet knife when I lived on the Gulf Coast. Big fish down there ya know.. :tongue:

Shun offset scallop edge slicer. Before you roll your eyes it's my only pricey blade and it was an anniversary gift from my wife.
 
I have one of the forschner 12" slicers and its pretty good right after being sharpened but it loses its edge fast. I picked up one of the 14" wusthof slicers from the MABBQA website and its the only one I use now.
 
You cant go wrong with Forschner, Wusthof, Victorinox, F Dick, or Dexter-Russell. It really comes down to how much you want to spend.

 
I like my victornox, mostly for the price. There are better blades but they probably cost more. It gets the job done.
 
I love my Wusthof Grand Slicer. Is it the best? Dunno. But it's great for me...
 
I like this 14" Victorinox. Does a good job without breaking the bank.

I use the FKH-8 for slicing and most other kitchen uses.
It will slice brisket as thin and as easily as any other knife, plus does all the rest.

Ooh they come in lefty models too. I'm sold, gonna ask for one for Christmas.

For the record while being left handed myself I feel left handed people should be thrown over a cliff at first sign to purge humanity of the defect.
