And onto to 26.75 OTG with a little pecan.

About an hour at 275; IT about 110*

Just love the color that Oakridge Dominator gives pork; I was going to reverse sear but they are so pretty I think I'll just "smoke" to an IT of 145* or so and then rest.

When we do chops we always do a couple extra to fine chop for tacos, quesadilla's green chile stew etc.
