That looks great! We love porcheta and I make one a couple times a year now. Normally Thanksgiving or Christmas and then once in the spring when we remember how good it was. The Italian salsa verde really is the icing on the cake and the left overs used for porcheta sandwiches is now more popular than the roast the night before.
