A couple of camp cooks from last time out.
Went with a plate of beef short ribs again, I really like them. Planned on around 6 hours for these.
Slathered in bacon drippings and seasoned with coarse salt and cracked black pepper.
Onto the low heat side of the fire..
flipped and rotated the ribs every so often... added a log to the fire when needed.
then the rain came. :doh:
moved some hot coals to the little cooker and continued til the ribs were tender...about 6 hours total.
That's pretty much it. Ribs, corn and tomatoes from the garden..
next morning...
lit some logs...
This was one of those "last of the bacon, etc.." meals.
started with cubed tatoes, onions, cooked sausage,
flour to thicken, and seasonings...
some cubed, grilled pork tenderloin from another meal...
added milk, smoked cheese and dotted with butter for good measure.
used the last of the bacon for a lattice...hit it with pepper..
shoveled a few hot coals on top and let er go..
in about 45 minutes, it was hot and bubbly...
rotated the pot and the lid every so often for even cooking...
fruit on the plate to make it look healthy..
It was creamy, gooey and smokey. Sort of a cross between scalloped tatoes and tatoes with gravy.
