It was whole bird I butterflied out. Much easier to work with that way.
250-275 for about 4 hours then 300/325 for about 45 min.

I brined it overnight with 1/2 cup espresso and 1/2 cup molasses,4 cups water 3 tablespoons of salt. Rubbed it with salt, pepper, dry mustard, toasted coriander, onion powder, old bay and sage.
