I love fried chicken and have been itching to try the kettle-cooked version that I've been seeing many of you do. It seems that many are using a commercial chicken breading or batter product such as one of these:

I can get these online, but I was wondering whether any of you who live out here in California know of products like these that can easily be found in grocery stores. I would prefer not to pay 2x retail price to order it from Amazon or from a supplier a thousand miles away. Any tips are appreciated!

I ran across this recipe. Have not tried it.
DIY House of Autry Seafood Breader - just as good as the real stuff!! :)
1 cup All Purpose Flour,
1 cup Wheat Flour,
1 cup Yellow Cornmeal,
1 tbsp Salt,
2 tsp. Onion Powder,
2 tsp. Garlic Powder,
1 tsp. Dried Thyme,
1 tsp. White Pepper,
1 tsp. Seasoning Salt.
Mix ingredients well and store in the fridge.
I figured it would make a good start.
 
I can get all of those locally and have no issue with getting them and mailing out to you using a less expensive option such as flat rate? My favorite is House Autry

 
I really liked mixing Andy's and House of Autry's. Andy's has a great flavor and texture while the Autry's is a smoother texture with less seasoning.
But making your own isn't hard, just takes a while to nail down the seasoning as well as the commercial guys.

Wow. That is an incredibly generous offer and one of the reasons I love this forum.

For convenience, I might just bite the bullet the first time and get some through Amazon, and then if I really like it and it turns out that its significantly cheaper to have you mail me a bunch of boxes I might take you up on the offer.

+1 on this. If you can get it into the buttermilk the night before it does some amazing things. Also, add some either siracha or franks to the buttermilk. It creates more of a batter than a dry dredge, but turns out some damn fine chicken.
 
The key is buttermilk. I use Zatarains chick fry or all purpose. I've heard House of Autry is good but never tried. the recipe that dadsr4 posted sounds good if you can get those items locally. Self Rising flour is probably the best to get a light crust. Whichever you use soak in buttermilk overnight.
 
I bought some House of Autreys chicken rub from Amazon.com. We are prime members and got free shipping. Still have not had the chance to try it as of yet.
 
Buttermilk is a MUST.
Another secret to crispy fried chicken... Fry pieces halfway through (if your total time is 20 min, fry 10 minutes) then remove pieces for a while.
If you're doing them in batches, start the second batch. Remove second batch to drain and return 1st batch to oil and finish for the 2nd half of time. Of course, do the same with the 2nd batch.
Makes 'em really nice and crispy.

EDIT: Also works for french fries.

The Louisiana brand is pretty common in Cal.....try Smart & Final (might be Cash & Carry) or the regular groceries in the ethnic aisle......Even Target food store may have that..................

The make your own deal from dadsr4 looks just fine too.........
