Had to break out my old camera to get these pics. For some reason I keep getting a download error. Not doing anything different so who knows.
Anyway, soaked this 3 1/2 lb corned beef flat out for a day and a half, seasoned (per Thirdeye's recipe - Thanks Wayne), rested overnight and smoked on the UDS for about 4 hrs to 150. Then into the pressure cooker for a 20 min run at 15lbs. Rested and gave it a try. Really really good! Promised a couple of friends to serve them sammies tomorrow night....man, I may not be able to wait. Thanks for taking a look and hope every is having a great weeked.
