The brisket option is new to me, and I am loving it, but somehow the pulled pork as a "topping" became a thing in the last 10 years around here. Not sure how or why.

I feel your pain, Craig. Can't begin to count how many times I had a great Throwdown entry all planned out and then it never happened due to any number of reasons, so don't feel too bad.
Quality over quantity, right?
