Been wanting to try a PSB for a while and I was lucky enough to have a supermarket nearby doing 2 for 1 chuckies, so I scored there. I also waited until my chocolate milk stout was ready for consumption and used that.
My wife made some horseradish mayo, which was duly slathered on the top of the rolls.
Seasoned the chick with SPOG and let the drum run around 280ish until the IT hit 165°. Threw it in the veggie mix, foiled it and put it in the over for a few hours until it could "shred like spaghetti", uncovered and left in the oven until the liquid was reduced.
