Knows what a fatty is.
Did some spare ribs on the weekend. Simple rub overnight and on to the lump with a couple chunks of hickory. Total time was about 2.5 hours, maybe less. Dunno what temp was going on in there but it felt right. (I will get a thermometer someday) They turned out great! In hind sight I would have wrapped them I foil to go a bit longer but kids were "starving".
